The great acidity, the low concentration in color and many other elements that come from the terroir, make these grapes very suitable for the production of sparkling wines elaborated with the Classic Method.
We obtain a wine with great personality and structure that boasts the distinction of being the first sparkling wine obtained from Nerello Mascalese grapes.
This wine is obtained from a Nero Buono di Cori vineyard, planted in 2012 on the La Francescana estate for the first time in 2012.
Although it has been counted among the disappeared vines, this variety, typical of Lazio and originally from Cori, has recently been rediscovered by some courageous producers.
In our conditions it expresses completely peculiar notes and sensory aspects that give this variety a strong personality.
The vineyard of these grapes is situated on the overlooking hills in the plain of Catania, in Contrada Gelost Bianco (Misterbianco).
This wine is full of fruit and softness with a very pleasant expression and is dedicated to a young and modern taste.
The union of Chardonnay grape wines with others obtained from typical vines is carried out with the aim of balancing their acidity, creating at the same time interesting synergies and enhancing the aromatic aspects in their varietal freshness. From this union we obtain a soft white, of considerable complexity and suitable for interesting food and wine combinations. The terroir also gives the taste a good very mineral sapidity that binds this expression of chardonnay to the production area.
The Pinot Noir grapes do not give opulent and full-bodied wines, but they have more than any other the ability to “fix” the characteristics of the terroir. However, they require an environment compatible with the early harvest and in which the subtle and complex aromatic notes that constitute the main charm of these wines can be preserved.
