Olio IGT Monovarietale Nocellara Etnea
Superior category Extra Virgin Olive Oil obtained directly from olives Nocellara and solely by mechanical processes.
This oil is obtained from Nocellara dell’Etna olives harvested in the autumn in the family olive grove and sent on the spot to cold extraction, not filtered. Nocellara dell’Etna is a typical variety of the province of Catania from which oils with particular elegance and finesse are obtained.
Nerello Mascalese has great potential for the production of classic method sparkling wines. Prolonged aging on the lees brings greater aromatic complexity, great length and a very fine foam. Over the years, acidity balances itself with softness, generating harmony and making dosage superfluous.
The particular elegance of the tannins combined with a considerable concentration determines a great sensorial complexity in which the mineral taste of the black sands of the volcano is highlighted in a very fine way. Alongside these characteristics, spicy notes are perceived that combine in a very pleasant way with the fruitiness of the grapes and traces of vanilla and toasted hazelnuts are felt in the aftertaste.
The Pinot Noir grapes do not give opulent and full-bodied wines, but they have more than any other the ability to “fix” the characteristics of the terroir. However, they require an environment compatible with the early harvest and in which the subtle and complex aromatic notes that constitute the main charm of these wines can be preserved.
The Cabernet Sauvignon grape vineyard was planted in 2006 in the Tenuta del Gelso Bianco, located on the gentle slopes that anticipate the plain of Catania. The soil is clayey-calcareous of medium texture.

The tasting will be accompanied by a platter of cold cuts and cheeses, 3 patés of our production, our IGP olive oil, bread, breadsticks and natural water.

* On Sundays and in the winter period from November 1st to March 31st the visit to the cellar will be carried out only at 12:30. The visits to the cellar are not intended as private, but together with other customers who reserve the visit for the same time.
